Contrary to baked pizzas that enter the oven fully dressed, we’ll need to grill the pizzas in two part. First, we grill the dough (oiled side down) until it’s lightly firmed up. This takes just a couple of minutes.
Heat the oven to 475F. Preheating the pans in this way will allow the pizza to cook from the ambient heat in the oven but will allow the crust to become crispy from contact with the hot pan, similar to using a pizza stone.

The key to making a great pizza in a convection oven is to remember that the temperature of your pizza should be about 25 degrees lower than the temperature of the box. You should also use a baking tray or stone to create crispy edges.
Anthony Falco, Roberta’s head pizza maestro, recommends putting your slice in a non-stick skillet on medium-low for a couple minutes. Once the bottom is crisp, add a couple drops of water to the pan, turn the heat to low, and cover with a lid. In about a minute, you’ll have fluffy crust and melted cheese.
Mix in mixer or hand mix until dough is smooth.
