Using a stone rather than grilling directly on the grates gives you a surface that absorbs moisture to help create perfectly cooked pizza, not burnt but light and crisp. For an evenly cooked pizza set up your Weber BBQ via the indirect method and preheat your stone for 15-20 minutes.
These are just a few of the many reasons it is a much better idea to avoid using house bricks and pavers for the inside of pizza ovens. You can always use standard bricks around the outside and for building the stand -in fact we recommend it, as standard bricks are actually better in wet weather.
You can also pop a pizza stone on the barbecue (gas or coal) to get that smoky, charred flavour. You may need other pizza accessories, too, including a dough scraper for homemade pizza dough and an efficient pizza cutter.
If you think just because you have a charcoal grill you cannot grill pizzas, think again, you can! There are all kinds of pizza stones, and wonderful attachments to adorn the grill with for cooking pizza.
If you don’t vent your pizza oven, air and smoke has nowhere to go but out of the same front door which is not ideal for cooking. The chimney or flue you choose for your pizza oven is important to make sure your pizza oven is working correctly. Without the right flue, the oven will not get hotter enough.
If you want to make a brick BBQ without cement or mortar, you can create a more simple brick barbecue pit by stacking fireproof bricks or cinder blocks so that they fit together neatly with no mortar needed. The barbecue pit won’t be a robust structure like a bricks and mortar barbecue, but it is a simpler alternative.
Tips: If you are cooking on a hooded barbeque with 4 or 6 burners, you can replace the flat hotplate with an extra set of grills (available at an additional cost from Barbeques Galore Stores). You can then use 2 x Bar-B-Chef Stones on the grill and cook pizzas for a large family or gathering.
Landscaping brick that’s been kiln-fired is safe to use. Brick paver stones should also be safe to use. Check on a manufacturer’s website to be sure if the paver material you want to use is fire-rated. A temporary brick fire pit is a snap to set up.
