Roast the turkey in the convection oven until the temperature reading in its thigh is 165 degrees Fahrenheit. Expect a medium-sized turkey of 12 lbs. to require two to two and a half hours of cooking time.
Assuming you are roasting your turkey in a 325F oven, plan on 15 to 17 minutes of cooking time for each pound of an unstuffed turkey. Plan on 20 to 22 minutes per pound for a stuffed turkey. 8-12 lb.
Cook for about 35 to 40 minutes per kilo. The 5kg bird in this recipe will take about 3 to 3 hours. Check on your turkey every 20 minutes or so and keep it from drying out by basting it with the lovely juices from the bottom of the pan.
