SURROUND is a mode which does not utilize the convection fan but instead heats from the bottom and top of the oven. Use SURROUND ROAST when preparing meats that benefit from a long slow cook time, such as pot roast or brisket.
Place the turkey in the preheated 400 oven for 20-30 minutes, until nice and golden brown all over. Lower the heat to 325 (on your convection – roast setting). Place a sheet of aluminum foil loosely on top of the turkey covering the breast and top of the legs. Cook for another 2 hours.
