Consider this also: burning wood releases more CO2 than gas, oil and even coal for the same amount of heat, so wood-fired ovens are not only less efficient, but have a much more pronounced effect on local air quality. Both natural and liquid petroleum gas are significantly ‘cleaner’ options.
You could always try burning wood pellets in your normal pizza oven, you can buy a big back of “cat litter” pellets from B&M. 15 minute heat up on the Uuni 2S, followed by about 45 seconds per pizza. First fire up of the Uuni 3 last night – the burner is amazing!
Wood Pellets: The Ooni 3 is fueled by wood pellets, which we always have on hand at our house for our Traeger grill. We love Traeger’s pellets! Their Hickory wood pellets are a great option if you’re looking for something a little more all-purpose; it lends a nice smoky-but-neutral flavor to pizzas.
Make sure you are putting your brisket in when the temperature is around 250 degrees Fahrenheit. We placed our brisket right on the stones in our pizza oven. Close the door and partially close the chimney to reduce the flow of oxygen so that the smoking process can take place. Allow to cook for approximately 9 hours.

The best woods for burning in your pizza oven are undoubtedly seasoned and dried hardwoods such as oak, maple, and ash. Hardwoods are usually much denser than softwoods (duh).
Heat comes from time and more fuel. Your fire will smoke more at the start when it isn’t hot enough to fully burn the wood. So you should aim to have a nice big fire don’t hold back with a small one as it is counter productive and will actually smoke more.
Wood Fireplace Wood-burning heaters have about 60 to 80% efficiency, which means they won’t lose too much heat. They cost less to run than gas and electric heaters, particularly if you use good logs.
Try moving your cooking surface up higher from the heat source if possible. Such as moving the rack of your pizza stone higher in your oven. If you are using a grill which has heat from beneath then you can try lowering the heat so that there is less direct heat, and more surrounding heat.
Now your wood fired oven is ready for smoking. Simply put your high heat pan close to the embers, close the door and let the smoke do its magic! Timings will vary depending on the weight of your meat so, we advise to keep a close eye on it and occasionally turn the dish using your metal peel.
To use a pizza stone on a grill, you simply preheat your Traeger to 500 degrees Fahrenheit with the pizza stone on top of the grill grates. It takes a pizza stone about 30 minutes to completely heat up, so don’t add your pizza too early.
