Steam ovens are generally considered to be healthier than standard ovens. The steam helps lock moisture into whatever food is being cooked or reheated, eliminating the need for extra oils and fats to keep food moist. No more getting trapped in the kitchen basting that turkey to keep it from drying out!
“Steam ovens are great because they turn out healthier, more nutrient-dense food. The high heat of a traditional oven can destroy nutrients like vitamin C and folate. Steam cooking preserves them. Because steam is a more moist way to cook, you can also skip the oils you’d need to use in a traditional oven.
If you are installing one oven, install it so that the oven’s interior floor is level with the countertop to make removal of baking trays and roasting pans easy. Home Depot recommends the height should be 31-inches above the kitchen floor for an average-sized user.
Steam also helps produce a really crisp crust. When the surface of the dough reaches 180F, the starches in the slowly forming crust start absorbing moisture. They eventually become so saturated that they burst and liquefy. As the bread continues to cook, this starch gel turns into a brittle and glossy shell.
When you make a cake, the best result is a soft centre with lots of moisture. A steam oven helps you achieve this using a hot pressurised system that helps your cake cook evenly while retaining its moisture and flavour.
To steam foods, make sure the ingredients are not immersed in the water. Over a pot of water, add a collapsible pot or Chinese bamboo steamer, then add the foods you want to steam. Cover, bring the water to a boil, then reduce to a simmer. Cooking times vary, depending on the foods being steamed.
Steaming generally doesn’t make meat juicier — it is just as easy to dry out a piece of meat with wet heat as it is with dry heat, if not easier.
Steamer vs. Oven Steam cooks at 212 degrees while an oven cooks at higher temperatures however a steamer will cook faster because steam transfers heat 100 times more efficiently than air. You cannot bake foods or brown meats with a steamer so a steamer will not replace an oven.
