When an item is cooked using the rotisserie method, the heat is supplied when the item is turned and pinned from all the sides. On the other hand, when an item is baked, the heat is supplied consistently from an oven, or it is even supplied from the top and bottom if possible.
To bake a standard recipe in a convection oven, lower the temperature by 25F. If you are baking a very large cake, you will want to lower it an additional 5F to 10F. The temperature needs to be adjusted because convection ovens are more efficient than conventional ovens and, thus, stay hotter.
