Do steam ovens cook faster?
Answer: Dehydrating can be done with a Convection Steam Oven (CSO). There is not a dehydration mode.
Combitherm combi ovens, Cook & Hold Ovens and holding cabinets have the capability to dehydrate. Dehydration can be done overnight in order to free up equipment use during service.
Dynamic air mixing the dynamic air mixing combined with the flow-optimised shape of the cooking cabinet ensures that the heat is optimally distributed in the cooking cabinet and is used exactly where it is needed. The food is cooked uniformly from the first rack to the very last.
Put 2 teaspoons of vegetable oil into each compartment of two 4-hole Yorkshire pudding tins (see tip, below). If you only have one tin, you’ll have to do this and cook the Yorkshires in two batches. Place the tin in the oven for 12-15 minutes to heat up the oil and tins until very hot (this is important for the rise).
Forget about cold batter: letting it rest at room temperature helps it rise taller as it bakes. A combination of milk and water gives the Yorkshire puddings extra rise and crispness.

What are Combi Ovens used for? Combi ovens really are amongst the most versatile machines used by chefs. These powerful machines can roast, poach, steam, grill, bake, shallow fry and even sous vide or smoke food.
Technology. Combi steamers generate steam using one of two systems: Boiler or cauldron systems produce steam within a steam generator located outside the cooking chamber; steam is then fed into the cooking chamber as needed.
For Yorkshire puddings to soar, the temperature must too so never open the oven door when they are cooking, to keep the oven as hot as possible. If opening the oven door is absolutely essential your Yorkshire puddings won’t be ruined, but they just won’t rise as much as they should.
Cooking with steam tends to be a healthier alternative than baking or frying in oil or fat. The natural textures, colours and flavours of the food are retained, as well as more nutrients and vitamins. It’s also faster, significantly reducing cooking time, particularly when preparing large quantities.
