You really can cook almost anything in a combi steam oven, which is certainly not the case for microwaves. Not if you want to cook something well, anyway. For argument’s sake, here are a few examples of dishes you might also put into a microwave but which are better using steam.
Drains and hoses: The drain at the bottom of the combi oven is designed for steam condensate runoff. If that drain is clogged, the oven will not run.
Answer: Most oven safe cookware is safe for use in the Convection Steam Oven (CSO), such as glass-ceramic, Pyrex, and heatproof glass. Do not use cookware that would not go in a normal oven. Tupperware and similar containers are not oven safe.
It’s a great choice for baking, oven frying, and roasting foods like pizza, cookies, and French fries. Combination Mode: Hot air and steam combine to cook foods without losing moisture.
If you are going to put a bowl or dish in there, use ceramic or stainless steel – both of those should be fine, and unlikely to leach strange things into your food.
The other types of enamel pans you’ll commonly see are baking dishes and cast iron pots and pans; think Le Creuset or Staub. Like enamel oven trays, enamel baking dishes are fine for steam oven use but should be dried well after washing.
Steam cooks at 212 degrees while an oven cooks at higher temperatures however a steamer will cook faster because steam transfers heat 100 times more efficiently than air. You cannot bake foods or brown meats with a steamer so a steamer will not replace an oven.
