Hardwood comes from trees that lose their leaves in the fall, like oak or maple trees. Softwood trees, like cedar or pine, don’t lose their leaves. Hardwood is always the better choice when it comes to making your pizzas.
Smoked pizza tastes amazing. It tastes like the best pizza you’ll ever have, but it is also very easy to make, and without the cleanup of making a pizza in the oven. Smoking your pizza gives it a delicious flavor as nothing else can.
On the stove top, heat an ovenproof skillet over high heat. Add remaining oil; when it smokes, add fish, skin side down. Season fish with salt and pepper, and transfer to oven (place it on a baking stone, if you have one); set a timer for 6 minutes.
Use the Vision Grills Lava Stone (or Pizza Stone) on the cooking grate. Add 2-3 pieces of mesquite or hickory wood or 2 handfuls of shavings to the smoking charcoal, close the lid until ready to add the fish. Place the fish on the oiled lava or pizza stone skin side down.
Allow the oven to cool down to about 110 130C. Place your meat or fish into a high-heat cooking dish or grill rack. Soak your wood chips for 30 60 minutes before placing them on the embers inside the oven. Once they are giving off smoke, push the embers to the back of the oven and place your food inside.
You’ll need a pizza that is less than 13.5 in diameter. Almost all frozen pizzas are intended to be cooked in your home oven, so chances are many of them don’t fit. Aside from frozen pizzas, there are a few take-n-bake pizzas (raw but premade pizzas) that will also work in the Pronto.
Put a medium cast-iron skillet in the pizza oven and let it heat for 5 minutes. Place the steaks in the skillet, return the skillet to the oven and cook until there is a dark brown crust on the bottom of the steaks, 2 to 5 minutes.
Place the salmon on the cedar plank, skin side down and roast at 180C until the salmon is just cooked through and the edges are browned, it takes about 12 to 15 minutes. Let the salmon stand on the plank for 5 minutes before serving.
After we got tired of having to refill the wood pellets, we tried wood chips. These worked well and required less attention than the pellets. Don’t worry about the flavor of wood chips. We usually get hickory or mesquite, but since the pizzas cook so fast, you won’t taste a difference.
