A combi-oven is a versatile piece of equipment that combines three modes of cooking in one oven: steam, circulated hot air or a combination of both. The combi mode is used to re-heat foods and to roast, bake and oven fry. The steam mode is ideal for rapid cooking of vegetables and shellfish.
Combination microwaves use microwave energy, much like a traditional microwave does, but combined with the added benefits of fanned hot air, making grilling, roasting and baking easier and quicker than before with convection hot air giving that perfect roasted finish.
Rational’s combi-ovens don’t eliminate the need for hoods. Although Rational does manufacture some combi-ovens with self-contained hoods, they are still required for combis. However, with their small footprint, combi-ovens can dramatically reduce the cost of a hood.

Steaming also prevents cross-flavoring, so you can cook a salmon and chocolate torte at the same time without getting a fishy dessert.
